Caroline Mathon
Caroline Mathon obtained her PhD in pharmaceutical sciences from the University of Geneva (Switzerland) in 2014. During her doctoral studies, she developed analytical methods, mainly liquid chromatography – mass spectrometry based, for the detection and quantification of small molecules in dietary supplements and foodstuff. Her thesis was in collaboration between the School of Pharmacy of Geneva-Lausanne and the official food control authority of Geneva. In October 2014, she joined the Chemistry Department of the University of California, Riverside. During her post-doctoral tenure, Caroline analyzed sugars and assoicated derivatives in plants by LC-MS, as well as used 1H-NMR spectroscopy to perform metabolomic profiling of pomegranate juices. Caroline joined the Wheelock lab in January 2016 to investigate metabolites involve in pulmonary inflammation.
